MELICAO is deliberately heated very lightly to make it spreadable, but still crystallizes naturally. This is because the base is 90% pure honey – a sign of quality.

Want to make the honey slightly liquid again? That can be done easily, without damaging the good substances.

Here's how to do it safely:
– Place the closed jar in a bowl of warm water (au bain-marie)
– Make sure the water does not get warmer than 40 °C
– Let it warm up slowly to the desired texture
– Stir gently if necessary

Why max. 40 °C?
Above 40–42 °C valuable substances are lost. Both honey and cocoa contain natural enzymes, antioxidants, and aromas that are best protected. By heating gently, you preserve both the quality and the taste.

Crystallization is therefore not a flaw, but rather proof of quality.
